Game days and busy weeknights just got easier with these Slow Cooker Hawaiian Chicken Sloppy Joes! Tender shredded chicken and pineapple bathe in a sweet and tangy Hawaiian-inspired sauce.
Place shallots and bell pepper in a 5-6 quart slow cooker. Nestle chicken breasts on top.
In a medium bowl, combine the ketchup, pineapple juice, soy sauce, honey, vinegar, ginger, onion powder, garlic powder, black pepper, and nutmeg. Pour mixture over the chicken.
Add the garlic. Cover and cook until chicken is fall-apart tender, 4-6 hours* on low.
Remove chicken from slow cooker and shred with two forks. Return the chicken to the slow cooker and stir in the pineapple. Cook on low 15-20 minutes.
Serve hot on rolls of choice with sliced green onion and a squeeze of lime.

*Actual length of cooking time may vary according to individual slow cooker. The one I have gets hot so I stick to the lower end of the range.
