As 2018 comes to a close, I thought I’d wrap up the year by sharing The Best Nine of 2018 on Instagram. I love there was no single category that stood out, but rather a variety of recipes that caught the attention of the IG community. Check them out!

7. Paella Stuffed Zucchini w/ Shrimp & Chorizo
Saffron-kissed Paella Stuffed Zucchini complete with plump shrimp and savory chorizo. This gluten- and dairy-free dish showcases zucchini’s versatility as the perfect vessel for a streamlined, mouthwatering paella.
6. Raspberry Chocolate Chip Crumb Bars
Instagram certainly wasn’t cookied out when I posted these 7-ingredient Raspberry Chocolate Chip Crumb Bars on Friday. You basically have tender, buttery shortbread with a layer of raspberry jam and chocolate chips with a streusel crumb topping that takes all of 15 minutes to prep.
5. Heirloom Tomato & Goat Cheese Flatbread
IG loved this Heirloom Tomato & Goat Cheese Flatbread that beautifully showcased the seasonal treasures atop a crisp crust with sweet onion jam, crumbled goat cheese, and fresh herbs.
4. Instant Pot Chicken Marsala Risotto
Instant Pot recipes continue to garner lots of attention. This Instant Pot Chicken Marsala Risotto is a culinary collision of two craved comfort foods that eliminates all of the stirring typically required for risotto.
3. Frosty Citrus Margaritas
Kinda wasn’t surprised that a cocktail made the top three! These Frosty Citrus Margaritas are a blend of tequila, Grand Marnier, orange and lime juice, coconut milk and ice. A creamy, dairy-free twist to the classic Mexican cocktail that will always bring plenty of cheer!
2. Potato Leek & Fennel Gratin
In spite of the potato going in and out of favor, not only was this recipe a hit on IG, it’s the most ‘favorited’ and ‘gawked’ in my Foodgawker Gallery. This Potato Leek & Fennel Gratin is loaded with fontina and parmesan cheese, and perfectly browned with crispy edges and tender, creamy scalloped potatoes.

1. Individual Chicken Pot Pies w/ Homemade Herb Crust
Yep, Individual Chicken Pot Pies stood out above all the rest! A simple, flaky herb crust swaddling chunks of tender rotisserie chicken and vegetables bathing in a smooth gravy flavored with sage, rosemary and thyme. It’s among the top five most requested dishes in our house, and not really surprised this classic comfort food recipe is the one that resonated the most on Instagram.
I’m so grateful to share my passion for cooking, creating recipes, and experimenting in the kitchen here with all of you. I’m so blessed to have you following along on this blogging journey that simply started as an idea to be the ultimate gift for my children. The online recipe book I intended for them quickly became something else beyond family. Something to be shared with everyone interested in what’s cooking in our NJ kitchen. I can’t wait to share more delicious recipes with you in the coming year.
